Hello Everyone,

Some of you might not know that about me, but I am a big hobby cook! I love trying out new cuisines and I am a total foodie. Hence, sometimes I try out new things from various culinary backgrounds. I wanted to share the recipes from a recent dinner I made here with you. I will just post the easiest ones so you can prepare them quickly as a snack, or make a whole dinner out of it 🙂

First of, Hummus with Sautéed Mushrooms (You can clearly leave out the Mushrooms if you don’t like eating them, or simply substitute them with something else).

  • What you need for the Hummus: Chick Peas (Canned is fine), Tahini, Garlic, Lemon, Olive Oil, Salt
  • What you need for the Sautéed Mushrooms: Onion, Garlic, Mushrooms (here I used Oyster Mushrooms), Balsamico, Sugar, White Wine
  1. Add Chick Peas, 2 tablespoons Tahini, Lemon Juice (at least 1/2 a Lemon), one garlic clove,  two pinches of salt, olive oil and some water into a blender. Make sure everything becomes smooth. Taste it and if you like it, add some pepper, curry or kurkuma for some extra flavor to it.
  2. Heat up Oil, add garlic and onions. Add some sugar and wait for them to caramelize. Add Mushrooms and add the rest of the ingredients. Cook for at least 15 minutes, but up to what you like.
  3. Now if you want to eat the Hummus warm, keep the hummus in the warm oven while preparing the Mushroom topping. Sprinkle some oil over the Hummus in a heat resistent bowl and cover it with foil.
  4. Lastly, add the Mushrooms on top and VOILA 🙂 Little Tip, add some Sumac for some extra taste and texture

 

Cauliflower Hummus — One of my favorite things!!!!!

  • What you need: A medium sized Cauliflower, Parsley, Tahini, Garlic Lemon, Olive Oil, Salt, Ground Pepper
  1. Heat up oven to 450F. Meanwhile wash the cauliflower and break down the pieces into nice smaller florets. Drizzle olive oil over the flowers and keep them in the oven for 30 minutes. Turn them regularly. For a couple of minutes broil them until they have a nice colored crust to them.
  2. Take them out of the oven and let them cool down for about 15 minutes.
  3. Add cauliflower (leave some for the garnishing), one clove of garlic, lemon juice, two tablespoons of Tahini (but really it is up to your taste), pepper, salt and olive oil, Add some water if needed. (I usually do that so I would recommend on adding).
  4. Blend everything until it has a nice texture.
  5. Fill into Bowl, chop parsley and add the remaining florets on top of you Cauliflower Hummus and Enjoy!

  • What you need: One Eggplant, Garlic, Tahini, Olive Oil, Salt and Parsley
  1. Heat up Oven to 500F. Wash eggplant and rub olive oil into the skin of it. Keep it in the oven for 30 mins, and turn it once in a while, Broil for a couple of minutes. Remove it once the skin starts peeling.
  2. Let it cool down for 15-20mins.
  3. Remove the skin and cut the egg plant into smaller pieces.
  4. Add eggplant, Tahini (at least 2 tablespoons), water, olive oil, one clove of garlic, salt and if you want pepper to blender. Blend until nice and smooth.
  5. Chop some parsley for the garnishing and you are all DONE!

Make sure to have some pita bread, pita chips or anything that you like for dipping 🙂
